Ingredients

  • 1 cup (250g) Creamy Peanut Butter
  • 1/2 cup (113g) Unsalted Butter, room temperature
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 Large Egg, room temperature
  • 1 tablespoon Real Vanilla Extract
  • 1 1/2 cups (188g) All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking pans with parchment paper or silicone mats.
  2. In a large mixing bowl or stand mixer, cream together the peanut butter, softened butter, white sugar, and brown sugar on medium speed for 2-3 minutes until fluffy.
  3. Mix in the egg and vanilla extract on medium-low speed until well combined, scraping down the sides of the bowl.
  4. In a separate bowl, whisk together the flour, baking powder, and salt, then gradually add to the wet ingredients on low speed until just incorporated.
  5. Scoop the dough into 1-inch balls, roll in extra granulated sugar if desired, and place 2 inches apart on the prepared sheets.
  6. Press each ball with a fork in a criss-cross pattern to flatten slightly.
  7. Bake for 8 to 9 minutes, letting them rest on the pan for 5 minutes before transferring to a wire rack to cool completely.
